Eats: Sweet Potato, Kale and Corn Chowder

I mentioned that I was on a giant soup kick, and here is the evidence. SOUP. I have been making huge batches, freezing 2/3 of it, and then taking the rest with me for lunch during the week. I think most people would get tired of eating the same thing everyday for a week straight, but so far it has been pretty good. Typically, I will pack this with an apple, a banana, and some sunchips, although I have been trying to steer away from chips. Maybe I will start making some rolls or something to bring along. Hmm...
Anywho, this stuff is pretty hearty, and as always I put 3x the amount of vegetables in it, so it was pretty filling too! Not to mention healthy. Whoa, look at me being all adult-like and taking care of myself and whatnot.

Get (I doubled this recipe, so don't worry, this is a normal batch)
2 medium sweet potatoes, cut into small cubes
2 shallots, diced
1/2 bunch of green onion, sliced thin
1 bunch of kale, chopped
3 cups fresh corn (frozen is okay too)
3 cloves garlic
3 cups low sodium veggie broth
3 cups of water
1/4 tsp sea salt
1/2 tsp cinnamon
1 tsp coconut oil
In a large soup pan, heat coconut oil and add onion, cooking until softened. Add garlic, sweet potatoes, and seasonings, saute for another minute. Add vegetable broth and water, cook until potatoes are soft (test with a fork). Add green onion and cook an additional minute. Put everything in a blender (you will probably have to do this in batches) and puree until smooth. Put it all back into the soup pan, and add corn and kale, cooking until kale is softened. Add additional salt and pepper (if needed), and enjoy!

This sounds delicious! We had a ton of kale in our CSA this summer, I'll have to remember this recipe - though might not want to make soup in the summer I suppose...

ReplyDeleteKale is yummy! I used to make a stew with kale chick peas, sweet potatoes and a curried peanut sauce. I'm getting hungry now!!!
