Eats: Banana Pancake Muffins

I am on a mission to bake ALL the goods! It is a good thing I can pawn most of these off on Kyle, or else I would gain all the weight I lost back. I am also on a mission to get rid of all of the flour in the house to I can switch back to gluten-free flour. However, these are on the healthy side, so.
Get
1/2 cup butter
1 cup brown sugar
1 egg
1 diced banana
3 cups flour (I used wheat)
2 tsp baking soda
1 1/4 cups almond milk
Preheat oven to 350 degrees. Cream together butter and brown sugar, beat in the egg. Blend until banana is completely mixed in, then add flour and baking soda. Mix batter with spoon, then stir in almond milk, then spoon into muffin pans.
Bake 15-20 minutes.
