Eats: Salt & Pepper Shrimp
10:30 AMThis is just a little appetizer or a side-dish, but it was also the first time I ever cooked shrimp. So quick and easy and DELICIOUS.
2 tsp salt
1tsp black pepper
2 tsp Szechuan peppercorns
1 tsp sugar
1 pound peeled jumbo shrimp
2 tbsp peanut oil
1 red chilli, seeded and finely chopped
1 tsp freshly grated gingerroot
3 cloves garlic, finely chopped
Scallions, sliced to garnish
Grind the salt, pepper, and peppercorns into a mortor and pestle, add the sugar. Rinse and pat-dry the shrimp. Heat the oil in a pre-heated wok, add the shrimp, chilli, gingerroot, and garlic, and stir-fry until shrimp are cooked through. Add the salt & pepper mixture to the wok and stir another minute.
Eat.
