Eats: Fire-pit Salmon

Salmon! We thought it would be a great idea to buy some from the fish market the other week, and then maybe grill it in our old grill that we have in the yard. Turns out I took the grill grate in the house to wash it last fall, and now we have no idea where it is. Oops. It's okay, instead, we just built a fire in our amazing fire-pit and then used the grill grate from our little charcoal grill that we use for camping. It came out perfect.
Get
1 1/2 pounds of salmon
EVOO, I used about 3 tsp
Lemon pepper to taste
Cayenne pepper to taste
1 lemon, sliced into rings
1 lemon, juiced
1 lemon, sliced into rings
1 lemon, juiced
Place the fish on tinfoil, I used about two layers. Using a spoon, drizzle the olive oil, and lemon juice all over it. Then add the seasonings on top, and the lemon slices, spreading evenly. I don't eat the bottom part of the fish, but I leave it on for cooking, and you are going to want to for this because the bottom will blacken. Set grate over the fire, but not in direct flames, and put the fish on the grate. We left it on for about 15 minutes, and then decided that we should flip it. We then grabbed a pan to put it in, because we didn't want the top part of the fish to burn. We set the pan back on the grate, and let it cook another 5-6 minutes, took the temperature, and it was all set.
In the end, the bottom was blackened, and the sides were crispy and juicy. We don't eat a whole lot of salmon because it lowers your blood sugar, and I am already hypoglycemic, sadness. This came out really awesome though, so I think I am going to have to say screw it and try doing this again soon.

I didn't actually know that about salmon - that it reduces your blood sugar. It is so delicious, this sounds like a great way to prepare it!
