Eats: Spinach & Chive Chicken Burgers

I am not a burger person, Mc Donald's ruined burgers for me for the rest of my life, I just can't do it. Normally, I opt for a veggie-burger, but I found this recipe in the Detroit Free Press, so I thought I would give it a go.
Get (for burgers)
2 cups packed baby spinach
16 ounces ground chicken breast
2 tbsp honey dijon mustard
1 small bunch fresh chives (about 1/3 cup, snipped)
1 tsp herbs de province
For sauce:
3 tbsp mayo
2 tbsp honey dijon mustard
2 tbsp snipped chives
This makes four burgers, you can grill them, pan-fry them, or broil them.
Preheat/prepare grill. Heat a small skillet over medium heat, add the spinach with a little water clung to the leaves. Saute until wilted. In a bowl combine everything for the burgers, mix well. Shape into 4, 1/2 thick patties. Oil the grill and cook for about 6-8 minutes each side, or until done.
Meanwhile, combine everything for the sauce. When the burgers are done, add whatever you would like, and the sauce. NOMZ.
