Eats: Left-Over Hash

One of my favorite things to order at Mae's, one of our favorite breakfast spots in the area, is the W hash. This does not hold a candle to it, but, it was still pretty good! One of my favorite things about this particular breakfast dish is the fact that you can just add whatever you want to it.
Get
2 medium, Yukon gold potatoes
1/4 red onion
2 breakfast sausage links
2 pinches herbs de province
2 pinches cayenne pepper
3 tbsp feta cheese
Olive oil/cooking spray
2 eggs
Dice up the potatoes and cook them in a lightly greased skillet, adding a little of the seasonings. When they are about half-way done, slice up the sausage and add it to the mix. Add the chopped up onion last, because it cooks pretty quickly. You can also add more seasoning now if you would like. In a separate skillet, cook two eggs over-easy.
You can also add things like carrots, bacon, green/red peppers, or mushrooms if you like. I like to add hot sauce to mine, and I tend to season the eggs with black pepper while they cook, so there is always that option too. Nomz.
