Eats: Wheat, Oatmeal, And Raisin Muffins
5:30 PM
Muffins! Again?! Truth be told...yes. I can't help it! Muffins are so easy to make and I need to get rid of all of this flour. I really liked these, but, I think I will make another batch in a few weeks with more of the fruit in them. This calls for 1/3 cup, I would have liked 1/2 cup each, but, that is me.
Get
1 cup whole wheat flour
1/4 cup sugar
1/4 cup packed brown sugar
1 1/2 teaspoons of baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 1/2 cups quick-cooking oats
1/3 cup chopped, pitted dates
1/3 cup raisins
1/3 cup dried cranberries
1 cup almond milk
1/4 cup canola oil
1 teaspoon vanilla extract
1 large egg
1/2 cup boiling water
Cooking Spray
Combine all ingredients, adding the boiling water last. Let batter stand 15 minutes. Preheat oven to 375 degrees, spray cups with cooking spray and bake for 20 minutes or when the spring back when poked in the center.
