Eats: Spinach & Pine Nut Pasta

Another veggie-pasta dish, but at least this one looks nicer. It tasted pretty good too. I actually detest mushrooms, but Kyle likes them so I thought I would be nice for once and cook them for us. Again, it was good, but it didn't stop me from flinging my mushrooms onto Kyle's plate.
Get
8oz pasta
1/2 cup olive oil
2 garlic cloves
8oz spinach
3 large flat mushrooms, sliced
2 tbso pine nuts
6 tbsp dry, white wine
Salt & pepper
Parmesan shavings to garnish
Cook
Cook the pasta in a pan of boiling salt water until al-dente, then drain well. Meanwhile, heat the oil up in a large skillet and saute the garlic and onion for 1 minute. Add the fungus, (ha!) and cook for 2 more minutes. Add the spinach and cook another 4-5 minutes, until it is wilted. Stir in the pine-nuts and wine, season well, and cook another minute.
Transfer the pasta to a warm serving bowl and toss the sauce into it, mixing well. Garnish the with the cheese & serve.

hahaa..about the mushrooms. I like nuts in my pasta. Sweet recipe.
