Eats: Refried Beans & Tortillas

There was no way to get a good picture of this, again, more food that looks like slop but tastes AMAZING. This is supposed to serve 4-6 people as an appetizer, but Kyle and I ate it as a meal.
You will need:
2 tsp olive oil
3 garlic cloves, finely chopped
1 green chili, chopped
14 oz can red kidney beans, drained
14 oz can pinto beans, drained
2/3 cup vegetable stock
8 tortillas
1/4 cup cheddar cheese, grated
salt & pepper
For the relish:
4 scallions, chopped
1 red onion, chopped
1 green chili, chopped
1 tsp-garlic wine vinegar (I just used vinegar & garlic)
1 tsp superfine sugar
1 tomato, chopped
Heat oil in large skillet, add the onion and saute for 3-5 minutes. Add the chili and garlic and cook for 1 minute. Mash the beans with a potato masher and stir into the pan with the cilantro. Stir in the stock and cook, stirring, until the beans are soft & pulpy.
Place tortillas on a baking sheet and heat through in a warm oven 1-2 minutes. Mix together relish ingredients.
Spoon the beans into a serving dish and top with the cheese. Season well. Roll the tortillas and serve with the relish & beans.

Yum! Sara, this sounds awesome! I've been looking for meals that are easy to make/re-heat during the week when we are busy with work and working out - this is perfect! :) Thanks!
