Eats: Spicy Spiral Noodles

This lovely dish was created by yours truly on accident, and by accident I mean I tried to follow a recipe and did not have the main ingredient. Why? Because I didn't decide to make this until after I started cooking the noodles and saw said recipe on the back. It had called for pumpkin seeds, I had walnuts. A little extra omega 3 never hurt anyone, am I right? Sure.
What you'll need:
-2 or 3 Roma tomatoes sliced & chopped
-1 can of black beans
-Small onion, chopped
-2 garlic cloves, diced
-Salt
-Red pepper flakes
-olive oil
-black pepper
-1/2 up walnuts
On a baking sheet, mix the beans, onions, garlic and tomatoes together. Add seasonings to taste and drizzle with a little olive oil. Bake at 425 for about 30 minutes, stirring mix occasionally. While it is baking, cook the spiral noodles. Mix together when done and add the walnuts ( I screwed up and added them before, which was okay, but not the way it was supposed to be done). Or, if you want to try the actual recipe that was on the box, use pumpkin seeds.

ReplyDeleteMmm... seriously delicious. Here in New York, we call that type of pasta "fusilli". We have so many Italian-Americans here that Italian words are commonplace.

ReplyDeleteI have to make a little comment about language again, because you call these things noodles. So interesting, This stuff is called pasta in the UK, noodles are the thin long Asian things only. It took me a while to figure that out, because in my mothertongue German it's Nudeln for any type of pasta, Italian or Asian.
