Eats: Steak W/Feta & Olives
10:30 AM
After I made steak salad a few weeks ago, Kyle sent me this recipe. I have mentioned before that I am not that big on steak at all. This came out good, Kyle ate it, Louie had some of mine (spoiled brat). I am still not that big of a fan of steak, but the toppings were really good so I think I might try using them on something else.
Get
4 strip steaks (about 6 ounces each)
Marinade
1/2 cup olive oil
3 tablespoons balsamic vinegar
1 tablespoon red wine venegar
1 tablespoon crushed garlic
1 teaspoon salt
1/2 teaspoon black pepper
Topping
2 tablespoons unsalted butter
3 cloves of garlic, peeled, minced
1 small onion, peeled, finely chopped
1/4 cup sun-dried tomatoes
1 teaspoon fresh oregano leaves
1/2 cup sliced kalamata olives
1/2 cup crumbled feta cheese.
Cut several slits into the steak, place them in a bowl with half of the marinade. Seal, and refrigerate for at least 3 hours, or overnight. Preheat the grill to medium-high. Remove the steaks from the marinade and toss the marinade. Let steaks sit at room temp while you make the toppings.
In a small skillet, melt the butter over medium heat. Add the garlic and saute 1 minute, add the onion and saute until soft, and the rest of the toppings and saute 2 minutes. Remove from heat and set aside.
Cook the steaks until desired, brushing some of the remaining marinade onto them while they are cooking. Remove from grill and add toppings, eat!

If you put those yummy toppings on a piece of cardboard, I'd eat it. Seriously.
