Eats: Summer Squash Spaghetti

Guys, this was a really good meal. I made a giant pot of this, and guess what? The leftovers were pretty fucking amazing too. Pasta is the best leftover, for the most part. The sauce always gets thicker, the seasonings set into the meat and veggies, and everything is yum. 

Do you know what the worst leftover is? Salad. Wilted bastard. 

Anyway, this was really easy to make, as I just made normal spaghetti with ground turkey, then baked some summer squash to put on top. Easy peasy lemon squeasy.

Get
1 box spaghetti noodles
1 pound ground turkey
1 Jar of spaghetti sauce
1 large tomato, chopped
1 large onion, diced
4 cloves of garlic, diced
2 bell peppers, diced
2 bay leaves
Oregano
Salt
Pepper
Cayenne pepper
1 summer squash, cut into small slices
Extra virgin olive oil

 Preheat the oven to 400 degrees. Cook the noodles according to the instructions on the box, drain, set aside. In the pot, heat up some oil, then put in the ground turkey (I add a little of each of the seasonings here). When it starts to brown, add in the veggies, and a little more of the seasonings if you wish. When everything is done, add in the sauce, mixing well. Then, add in the bay leaves, and any more seasonings if you want at this time (it is all to taste!). At this point, you can either add the noodles to the sauce mix if you like having everything together (it is what I do).

You can cover the pot and let that simmer on very low heat for a bit while working on the squash, or, you can even just turn the heat off.  Toss the squash slices in a bowl with olive oil, salt, pepper, and oregano, make sure it is lightly coated. Bake in the oven 10-12 minutes, or until it is caramelized.

I basically just topped my pasta with the summer squash, but you can mix them in if you want. I also added sriracha, because I am an addict. I am sorry, except for not really.

There you have it, yummy, end-of-the-summer pasta! This makes a lot, like, a lot a lot. There was enough for a heaping helping for two people, and then we had another dinner from the leftovers, and I think Kyle took the rest to work. I just pulled another one of these squashes out of the garden, so I might have to make this again soon.

  4. Yum!!! We were hoping for more squash and zucchini in our garden this year, but it didn't come. That's not to say I can't buy it...I have really been loving summer squash lately, so I will have to make this!

  7. I've never tried squash or pumpkin for that matter. Not that I think they are related vegetables, they have just both been mentioned this week and highlighted my culinary novice-ness. I don't know what I am saying.

    I also agree, pasta is the best leftover, I think I even prefer it in its leftovers form. Especially lasagne.
