Eats: Spinach Pasta Sauce

When we went to Chicago a few weeks back, I really wanted to make sure that we used up all of the produce in our house, because I hate wasting food. I had no idea how I was going to get through 1 1/2 bags of spinach come Thursday night, when we were leaving Friday after work. I decided to make it into sauce, so that I could just make a pasta once we got back. See? Sometimes I have good ideas. Sometimes.

Get
12 oz  of spinach
1 onion, roughly chopped
2 tsp olive oil
2-3 cloves of garlic, sliced
3/4 cup of goat milk (reg milk will work fine too)
Parmesan cheese, salt & pepper to taste

Heat the oil up in a large pan, and add the garlic and onion and cook until translucent. Add the spinach and saute until it is wilted. Next, put the veggies in a blender and blend with the milk, adding the cheese, salt and pepper to taste.

This made about 12 oz of sauce, and I just stuck it in the fridge until we were ready to eat it (about 4 days). Then, I made a basic veggie pasta, and it was pretty good! I think what I like most about spinach, is that it tends to taste like whatever else you cook it with, so you can add things like basil to make it have more of a pesto flavor, or spices to make it hot. Plus, spinach is all kinds of good for you.

  1. Oh my goodness! That looks so delicious! My mom sometimes will make a spread just like that, except she uses it more as a dip or spread. But, the looks de-lish!

  4. Mmm... delicious. When cooked, spinach shrinks tremendously. And, as you say, it picks up the flavors of other ingredients. Plus, it builds big muscles like Popeye!

  11. That looks yummy! I love spinach with pasta. I don't eat pasta much anymore but use spaghetti squash often instead. I have gluten free pasta as a treat once in awhile.
