Eats: Goat Cheese Mac W/Things

Don't you just love how the more original the recipe is, the more vague the title is? This recipe was another result of "what is in the house that is still edible?", but it came out quite well. Goat cheese has a very distinct, odd-yet delicious taste and texture to it that I just love. Because cheese made with goat milk is less harsh on my stomach, we tend to always have it on hand. Of course I cave and will sometimes sprinkle some cheddar on my food, because it is cheese and it is delicious! I did add some cheddar to this recipe to balance out the sweetness, and it worked out well. 

Get
2 1/2 cups of macaroni noodles, any kind (wheat, gluten-free, regular, etc). 
8-10 oz goat cheese
2/3 cup cheddar cheese
1 1/2 cups unsweetened coconut milk (can use regular milk)
3 cloves of garlic, minced
1 small onion, diced 
2 Italian flavored tofurkey sausages, sliced thin (obvs you can use regular sausage, or turkey sausage)
Salt, pepper, & fresh thyme to taste
2 tablespoons coconut oil

Cook the noodles according to the instructions on the box, drain, and set aside. In the same pot, heat the coconut oil, and then add the garlic and onion, cooking until it is soft and fragrant. Next, add the sausages, and season to taste with the salt, pepper, and thyme, cooking until the sausages start to brown a little. Add the coconut milk and cheeses, mixing well. Lastly, add the pasta, stirring everything together and mixing well, you can add more of the seasonings here if you would like.

I was nervous that the coconut milk would make this too sweet, but it actually came out fine! Of course, we topped ours with hot sauce, like you do, but it was great on its own. Kyle even ate the leftovers cold, straight from the fridge. I did not try this, but he said it was like a very cheesy macaroni salad. I think this would be really good with cherry or grape tomatoes added, or even goat cheese that is mixed with seasonings already (I saw a roasted red pepper one in the grocery store the other week). Possibilities guys, we have them.

  2. Yummy! That looks delicious and I love goat cheese. There are all sorts of fancy options, as you say with peppers or herbs added. I treat myself to gluten free macaroni every couple of weeks so I will just have to try this version!
