Eats: Clementine & Rosemary Bread

Carbs! So, the week before we went on vacation, was also the week of trying to eat whatever was in the house, so that I did not have to go to the grocery store. I kept buying boxes of clementines, so I decided to try doing something with them. I found a bunch of recipes for clementine and rosemary bread, and figured "eh, why not?". It came out great! It made the whole house smell wonderful while it was baking, and we had breakfast for a week. 

Get
8 clementines
2 cups AP flour 
1 cup wheat flour
1/4 cup coconut oil 
1 cup sugar
1 tbsp baking powder
1 tsp salt
1-2 tsp cinnamon 
1/2 tsp cloves
1/2 tsp nutmeg
1 tbsp minced fresh rosemary 
1 tbsp vanilla 
1 egg
1/2-1  cup chopped walnuts, more for garnish

Preheat oven to 350 degrees, lightly grease a bread pan. Zest two clementines and set aside the zest. Place peeled clementines in a blender and blend until liquid, set aside. Toss clementine zest, flours, vanilla, rosemary, and spices in a bowl. Whisk the egg, oil, and clementines together in a medium bowl. Mix the liquids, and the walnuts into the flour mixture. Mix will not be really smooth. Pour batter into pan, and garnish with more walnuts. Bake for 45-1 hour or until fork comes out clean. 

This was really good fresh from the oven, obviously, but for the next few mornings we toasted slices of it in the toaster. Wow. Such nomz.

  3. Oh yum! love just about anything with citrus zest in it and I love bread! I will have to try to make this in a gluten free version. It looks and sounds totally delicious. Thanks for sharing it!
