Eats: Chocolate Chip & Cranberry Sauce Muffins

MUFFINS. They are exciting because CARBS. I mentioned that we went to a dinner party the other weekend, and that resulted in a ton of leftovers, as per usual. My friend Alice gave me a bunch of cranberry sauce to take home, and it was really good, so I wanted to make sure that it didn't go to waste. I found a bunch of recipes online for cranberry sauce muffins, so I thought that would be a good option. When I was done mixing all of the ingredients, I threw in chocolate chips because last minute decisions are always good, correct?

These came out great! They taste the best fresh from the oven, or zapped in the microwave for a few seconds so that the chocolate is all melty and amazing. 

Get
1 1/2 cups AP flour
1 cup + 3 tablespoons rolled oats (reserve the tablespoons for the top)
1/2 cup brown sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon 
1 1/2 cups cranberry sauce
1/2 cup almond milk
1/3 cup vegetable oil
1 egg
Chocolate chips to preference. 

Preheat oven to 400 degrees. Prep 12 cup standard muffin tin. In one bowl, mix all of the dry ingredients, in another, mix the sauce, eggs, milk, and oil. Pour wet ingredients into dry, until well blended. Add chocolate chips. Fill cups about 3/4 way full, top with reserved oats. Bake for 20 minutes, or until toothpick comes out dry. 

Eat.

  2. Interesting flavor combo! I've stayed away from cranberry sauce on account of an unpleasant experience as a child, but I loooooooove chocolate. I'm open to anything though...I wanna try these.
