Eats: Leftover Hash w/Kale10:30 AM
I have already posted one version of this back in June, it was more of a breakfast hash. This is a dinner leftover hash, and it had all sorts of veggies (see also: KALE) and Liam ate it. And liked it.
Get (this makes a lot)
6 yukon gold potatoes
1 large onion
2 cloves garlic
2 medium tomatoes
8 breakfast sausage links
Sea salt & black pepper
Thai Chilli pepper
2 bunches of kale
Chop all of the veggies, and sausage up into small pieces. Heat up some olive oil in a pan, and add potatoes. After a few minutes, add the onion, garlic, and carrots, seasoning with the salt & pepper to taste as you go. The sausages were leftover from another meal, so I added them in with the veggies after the potatoes were almost done, but if you need to cook some sausage, do so in a separate pan. I also cooked the Thai chilli peppers separate when everything was done because of Liam, but, you can always add them (or any hot peppers if you would like) with the other veggies. Add the kale (make sure you slice it up thin), and lastly the tomatoes.
In a separate pan, fry up an egg. Either over-easy, or sunny-side-up is fine. Add a little cheese to the veggie/sausage mix, top with egg and you are good to go. Normally I would have added cayenne pepper to this, but again, I didn't want Liam's innards to catch fire.
This made a very large batch, so I ended up reheating everything later in the week for Kyle and I for another meal, I just fried up more eggs to go with it. So does that make it leftover, leftover hash? Idk, but it was amazeballs.
