Eats: Quinoa Tabbouleh

When we decided to check out the farm stand in Oak Park awhile back, Kyle got very excited (he is easily entertained) about the amount of fresh parsley that was available for pretty cheap. I had fully intended on making some dressing/sauce or some salsa, but tabbouleh sounded like a good change from the usual salads I take to work. So that is what I made.  

Normally tabbouleh calls for bulgur, but I have loads of quinoa in the house so I thought that I would try that instead, seeing as though other people on the interwebs have had some success with it.

Get
1 cup quinoa
2 cups water
1/4 cup olive oil
Salt to taste
1/4 cup lemon juice
3 tomatoes, diced
2-3 bunches green onion, diced
2 cups fresh parsley, diced

Boil water in a saucepan, add quinoa and salt. Reduce heat and simmer for about 15 minutes. Fluff quinoa with a fork. Meanwhile in another bowl, combine everything else. Stir in quinoa once it has cooled, mix well.

You can eat it right away if you want, but I put ours in a large jar and let it sit in the fridge overnight, because I like mine cold. You can also add things like chopped cucumber or carrots if you have them on hand, because veggies are awesome!

  1. about a year ago, i developed a weird reaction to quinoa. i went from eating it 3 times a week to it making me violently ill. i keep trying it, hoping that reaction goes away...it hasn't yet. but...this makes me want to try again!! yum!
