Eats: Camp Food!

I mentioned in yesterday's post that Sideburns and I cooked all of the food at camp (normally it is just hot dogs/veggie dogs and snacks), so I thought I would do a camp-foodie post.

Multi-grain Blueberry Pancakes

This one was super easy, I just bought The Silver Palate grain berry, multi-grain  pancake mix (1 cup), added 1 egg, 2/3 cup almond milk, and 1 1/2 cups blueberries. I mixed it all in a pot, then cooked them on a skillet over the charcoal grill. There are even pancake mix options where all you need to add is water, but this one looked a bit healthier.  If you don't want to pack eggs, use flaxseed instead. I topped ours with maple syrup and strawberries, because delicious. 

I really did not need to post a recipe for these because there really isn't one. I just wanted to take a picture of the pancake okay.

Seasoned Green Beans

We grew green beans and this year I was not going to let them just sit in the fridge and go bad, so I cooked this dish up before we left, put it in a container, and reheated it in a skillet when we were ready to eat it. 

1 1/2 cups fresh green beans
1/2 cup unsalted peanuts
3 garlic cloves, sliced thin
1 sweet onion, sliced thin
1 tbsp olive oil
Salt & Pepper to taste

Heat the oil in a skillet, add the garlic and peanuts and cook one minute. Add the onion and cook until soft. Throw in the beans and salt and pepper. Stick in fridge to cool

One Pot Pasta

I took this before it was actually done cooking because it was getting dark, but I promise this was really good!

1/2 pack spaghetti noodles (I used brown rice pasta, came out great)
1 1/4 cups grape tomatoes, halved
2 Thai chili peppers, sliced thin (you can also sub red pepper flakes)
1/2 sweet onion, sliced
3 garlic cloves, sliced
2 sprigs oregano
2 sprigs curry
2 cups kale, chopped
1 tbsp olive oil
Salt & pepper to taste
2 1/4 cups water
1 cup feta cheese, chopped
1 cup basil, chopped

I chopped all the veggies and put them in a container before we left, and put the fresh seasonings in a ziplock bag. All you need to do is combine all the ingredients in a pot and cook until the water evaporates. It kinda tastes like an Alfredo sauce, really good! Kyle cooked some turkey sausage to add to his, so it is really easy to add meat if you want that option. 

Hooray for camp food!
