Eats: Quinoa, blackbean & Tomato salad

Remember when I mentioned that Kyle and I planted a ton of plants this year, and to our astonishment, they actually grew? We are overwhelmed by tomatoes, only because I haven’t had the time to really cook them with anything just yet. Sunday I decided to try to make something with the tomatoes, and whatever else I had in the house, and ended up with this quinoa salad.

What you’ll need:

-2 large tomatoes
-1 can of black beans
-2 small onions
-Basil or cilantro
-1 cup of quinoa
-Salt & pepper
-1 tablespoon of olive oil
-1 tablespoon of lime juice
-2 tablespoons of butter, melted
-1 tablespoon of sugar

Cook the quinoa first (make sure to rinse it off), so you can chop the veggies & mix the dressing while it is cooking. Whisk the butter, lime juice, basil, olive oil, & sugar together in a large bowl. Mix the quinoa and the dressing together and add the veggies and beans (I heated the beans up in the microwave first). Add salt, pepper, bail/cilantro to taste.

*NOTES-I typically cook quinoa in salt-water, so mine came out a little too salty for me. I also used three very ripe tomatoes, and it was a bit watery, so I recommend two.

This was enough for a meal for two of us, and I also ate the left-overs cold the next day, and it was awesome. Stay tuned as I try to create every meal around tomatoes for the next month…

  4. I still havent tried this quinoa stuff but I've heard good things about it. I just hope it doesnt taste to "health foodie"
