Eats: Apple & Carrot Flaxseed Muffins

At the start of Winter, I bought a box of  multigrain flaxseed hot cereal, not really knowing what it was going to taste  like but assumed it was healthy. Healthy yes,  but no amount of cinnamon, agave, walnuts, pumpkin spice, fruit or anything else I could find in the house could make it edible for Kyle. So I checked the recipe on the back of the box and saw it was for muffins. Muffins? Who doesn't like muffins?! So, I tried to make them back in December...and failed. Miserably. I didn't give up though, I was determined to not waste an entire box of cereal so I tried again. Success!

The trick? Use a damn blender. 

Here is what you need:

1 cup multigrain hot cereal
1 cup flour
1 Tbsp. baking powder (not gonna lie, I did not have this, therefore, it did not go in the batch I made)
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup sugar
1 cup carrots, shredded
1 cup apples, peeled & chopped
1/2 cup milk (I used Silk)
2 eggs (I used flaxseed & Silk)
1/4 cup vegetable oil 
1 tsp. vanilla
1/2 cup pecans, chopped (I did not have these so, walnuts!)

Preheat oven to 400 F. Blend together dry ingredients, add remaining ingredients and mix until blended. Batter will be thick; spoon into muffin cups, Bake 20-22 minutes or until golden brown.
