Eats: Creamy Turkey Casserole

Earlier this week, something extraordinary happened, Kyle cooked something. In the 10+ years we have been together, Kyle has cooked breakfast once, and I think heated up some soup for me when I was sick and that is about it. I fully understand as he is around food all day long at work and I can easily see not wanting to be bothered with it once home. It's fine with me for the most part, I like to cook. But then Kyle is subjected to everything spicy and strange that I decide to make. That being said, Kyle already knew that I had plans to make chili with some of the left-over turkey so he had to make a move before I saturated the rest of it in some sort of peppery concoction. His solution: Creamy turkey casserole!

There were a lot of different receipies out there for this dish, but we ended up creating one meant for thanksgiving left-overs.

What you'll need:

-Stuffing
-Mashed potatoes
-Turkey
-Mayo or Miracle Whip
-Cranberry Sauce
-Shreaded Mozzerella cheese

Preheat oven to 350 and spray an 8in casserole dish/baking dish lightly. Combine about 4 cups of stuffing & chopped turkey, 2 cups mashed potatoes, 1/4 cranberry sauce, 3/4 Miracle whip and a bout a cup of cheese in the pan. You can either mix everything or layer it. Kyle left some mashed potatoes and stuffing to layer ontop and mixed everything else together.  Bake for 40 minutes and let stand for ten before eating.

We also did not have any stuffing, mashed potatoes or cranberry sauce left-over. So Kyle just whipped up some stuffing and mashed potatoes from the box and bought some cranberry sauce from the deli. Ours turned out really good, but I am sure with homeade left-overs it would have been just as amazing if not better.

As you can see, it turned out beautifully. We were a little apprehensive of the cranberry sauce and the miracle whip, fearing it would make the dish too sweet. It was completely perfect, I even brought some to work with me the next day and had people drooling over it.
