Eats: Dairy-free Oatmeal Jiffy Muffins W/a twist.

I am the queen of multi-tasking! Or at least I am getting better at it. First I mastered the art of reading while utilizing the treadmill at the YMCA today and now here I am blogging while cooking dinner, huzzah! 

I don't know a lot of recipes, but I do know how to take basic foods and put my own spin on them. For instance, here we have some Oatmeal Jiffy muffins. I always keep Jiffy mix on hand, both the oatmeal and the corn muffin mix, and they are under a $1 a box at most stores. Here I added some mulberries and brown sugar to make them a little more tasty. What you will need:

-1 box Oatmeal Jiffy mix 
- 1 table spoon wheat flax-seed
- 1/3 Coconut milk
-1/2 cup Mulberries
- 2 tsp brown sugar 
-6 Cupcake sleeves
-3 table spoons of water

*Makes 6 muffins.

As I mentioned before, I have issues with dairy products so I decided to try out some flax-seed instead of eggs. All you have to do is substitute 1 tablespoon of flax-seed with three tablespoons of water (or any other liquid you are cooking with).

Mix the Jiffy mix, the flax-seed, the water, and the coconut milk all together in a bowl until even. Add the mulberries (I barely had half a cup), and brown sugar. Mix until even and then scoop into baking cups. Bake at 400 for 15minutes or until golden brown.

Why did I use mulberries? Because they grow off the tree in my backyard. I don't think you can buy them in the store so If you do not have a mulberry tree growing near you, I would recommend using blueberries. I have also used almond milk, rice milk and soy milk when making these muffins and any are good.

  3. YUM! I love how you made your spin on a boxed muffin mix! Often dairy free recipes can be too time consuming or expensive when you finally get all of the ingredients together. Soon enough a blueberry muffin turns into a $40 "treat." So congrats on finding a good halfway point. I think the key of being a good cook/baker is improvising with your basic recipes instead of trying to impress everyone with complicated recipes on Taste Spotting.

    And that is one ginormous cup of java, missy. haha

  7. Oh so yummy! & healthy too. I like putting a twist on whatever I cook too. Some things are better than others.

    I work at making a good hashbrown that isn't too fattening. Its the Teflon skillet that helps the most.

  8. Oh goodness, those look and sounds so yummy! I've never even heard of mulberries though, so I guess I'll have to go for the blueberry alternative :)

    PS Just a random thought, doesn't "the blueberry alternative" sound like a band name? Or is it just me? It might be just me haha.
